What to specify in an RFQ
- Specify thickness at 6-8mm and state the tolerance. Thickness drives both appearance and how the slice behaves when thawed.
- Specify the acceptable percentage of broken slices. This is the attribute that most often disappoints on this format, and it is not covered by whole-fruit defect tolerances.
- Slices thaw faster than whole fruit and hold less structure once thawed. Confirm the intended handling — laid frozen, or thawed first — since it affects which thickness works.
- Brix and variety considerations are the same as for whole fruit: minimum 7.0 to 9.0 depending on variety, best tied to a named variety and shipment window.
